Recently discovered Jerusalem artichokes/sunchokes. They are deeeelish. Making scalloped version tonight with ginger and pecans:-)
They are exceedingly practical/economical. They grow like weeds… If you have a garden they are a cheap and easy source of food.

Have you grown them? Our soil is fairly heavy clay and not terribly conducive to growing tubers.
They do extremely well in pots too…
How do you start them?
Plant the little ones! Or a few large ones the first year and the second year you’ll have more than enough. Eat the biggies and leave the midgets.
Pots are great. 20l minimum and either use terracotta pots or be prepared to have cheap/thin pots burst open.
Like I said…, they’re weeds… It’s fire and forget. No maintenance needed. At the end of the season cut off everything except a few inches of stalk and leave them in the ground/pots until you’re hungry. They don’t keep…
Will they survive Canadian winters outside?
I know they do better in cooler climates than hotter (although they can stand a drought!) but I’m not entirely sure about a solid freeze but I do know that the UK winters are no threat. All I can say is TRY. They are weeds so they’ll prolly be OK.
Heavily mulch the ground with the trimmings in autumn. You’ll notice during the winter if they are failing as you dig them up for meals. If by the end of winter they are beyond hope then buy some more and replant although I’m pretty sure (guessing) they’ll be doing just fine.
I checked: clay soils should be no problem as they occur naturally on river beds and flood plains. But heed the warnings about keeping them contained as if they are allowed to spread out of hand they become bothersome to control.

When I said they don’t keep I meant they don’t keep once harvested… Just in case that wasn’t obvious I thought I’d clarify…
Of course they stay fresh in the ground so that they can sprout the following spring.
Do you plant them from seeds or from eyes like potatoes?

From the video it is really hard to tell if the kitty actually wanted to get down. Maybe it just wanted to hang out among the sunflowers and would have been perfectly happy to stay there for a while, then climb down by itself.

We have a cat that likes to climb up in one of oak trees and bite off the dead twigs.
